Ingredients
- 1 onion, chopped
- 1 clove of garlic, chopped
- 1 carrot, diced
- 1 zucchini, diced
- 1 teaspoon of curry powder (Keynes of other)
- 2 fillets of frozen fish (hoki or other), chopped to small pieces
- 1 handful of spinach or other greens
- 1 sweet potato, grated
- 1 tin of coconut milk
- olive oil for cooking
Directions
- heat a pot on a medium heat
- add oil and heat through
- fry onion for 1 minute
- add garlic, zucchini and carrot and fry for another 2 minutes
- add curry powder and fry for around 30 seconds, stirring
- add the chopped fish until cooked through
- pour in the coconut milk
- add the spinach or other greens and the grated sweet potato
- allow to simmer for 20-30 minutes on a low heat
