Fish curry

Ingredients

  • 1 onion, chopped
  • 1 clove of garlic, chopped
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 teaspoon of curry powder (Keynes of other)
  • 2 fillets of frozen fish (hoki or other), chopped to small pieces
  • 1 handful of spinach or other greens
  • 1 sweet potato, grated
  • 1 tin of coconut milk
  • olive oil for cooking

Directions

  • heat a pot on a medium heat
  • add oil and heat through
  • fry onion for 1 minute
  • add garlic, zucchini and carrot and fry for another 2 minutes
  • add curry powder and fry for around 30 seconds, stirring
  • add the chopped fish until cooked through
  • pour in the coconut milk
  • add the spinach or other greens and the grated sweet potato
  • allow to simmer for 20-30 minutes on a low heat
