Quick lentil salad

Ingredients

  • 1 can lentils (drained)
  • 1 handful of spinach/dandelion greens (chopped)
  • ¼ red onion (chopped)
  • ¼ herbs (chopped)
  • balsamic vinegar
  • olive oil (2 tablespoon)

Directions

  • cover the chopped red onion with balsamic vinegar and leave for 10 minutes
  • mix in the rest of the ingredients
  • enjoy on its own or with some hommous
