Lightly fried lentils with spinach and zucchini


Ingredients

  • dash of olive oil for frying
  • ½ zucchini, finely sliced
  • ¼ teaspoon of crushed garlic
  • ½ tin of lentils
  • 1 handful of spinach
  • 1 tablespoon tomato paste
  • squeeze of lemon juice
  • sprinkle of sea kelp seasoning mix
  • 1 tablespoon of yogurt

Directions

  • heat oil in frying pan
  • add finely sliced zucchini and fry until tender (about 2 minutes)
  • add crushed garlic and lentils and fry for 1 minute
  • add spinach and tomato paste and fry until spinach is wilted (about 1 minute)
  • take off heat and squeeze over a bit of lemon juice, a sprinkle of sea kelp seasoning mix and yogurt
