Ingredients
- dash of olive oil for frying
- ½ zucchini, finely sliced
- ¼ teaspoon of crushed garlic
- ½ tin of lentils
- 1 handful of spinach
- 1 tablespoon tomato paste
- squeeze of lemon juice
- sprinkle of sea kelp seasoning mix
- 1 tablespoon of yogurt
Directions
- heat oil in frying pan
- add finely sliced zucchini and fry until tender (about 2 minutes)
- add crushed garlic and lentils and fry for 1 minute
- add spinach and tomato paste and fry until spinach is wilted (about 1 minute)
- take off heat and squeeze over a bit of lemon juice, a sprinkle of sea kelp seasoning mix and yogurt
