Basic omlette

Ingredients

  • one onion, chopped
  • 1 zucchini, grated
  • 1 tomato, chopped
  • (some chopped meat)
  • 1 handful of spinach or other greens
  • 4-6 eggs
  • oil for frying

Directions

  • beat the eggs together in a bowl for a minute or two
  • heat the oil in a frying pan on a medium heat
  • fry onion for 3 minutes
  • if adding meat, add at this stage and fry until cooked through
  • add grated zucchini and chopped tomato and fry for a few minutes until tomato is mushy
  • add spinach or other greens and fry briefly
  • pour the eggs over the vegetables and allow to cook for around 30 seconds
  • take off the heat and put the frying pan under the grill for a few minutes until the omlette is cooked through
