Ingredients
- one onion, chopped
- 1 zucchini, grated
- 1 tomato, chopped
- (some chopped meat)
- 1 handful of spinach or other greens
- 4-6 eggs
- oil for frying
Directions
- beat the eggs together in a bowl for a minute or two
- heat the oil in a frying pan on a medium heat
- fry onion for 3 minutes
- if adding meat, add at this stage and fry until cooked through
- add grated zucchini and chopped tomato and fry for a few minutes until tomato is mushy
- add spinach or other greens and fry briefly
- pour the eggs over the vegetables and allow to cook for around 30 seconds
- take off the heat and put the frying pan under the grill for a few minutes until the omlette is cooked through
