Ingredients:
- Pulse pasta (San Remo brand available from supermarkets)
- 1 onion chopped
- 2 cloves of garlic chopped
- 1 carrot chopped
- ½ red capsicum chopped
- 1 bottle of passata
- three handfuls of spinach or other greens (eg. kale, dandelion)
- 1 large tin of tuna in olive oil (Sirena brand)
Instructions:
- fry the over a medium heat chopped onion, garlic, capsicum and carrot until they are tender
- add the bottle of passata and allow bring to a slow boil
- take off the heat and add tuna and chopped greens. Cover and leave aside.
- Cook the pulse pasta according to the instructions on the packet
- Strain the pasta and return to the pot. Add the tuna sauce. Stir through and serve.
