Pulse pasta with tuna sauce

Ingredients:

  • Pulse pasta (San Remo brand available from supermarkets)
  • 1 onion chopped
  • 2 cloves of garlic chopped
  • 1 carrot chopped
  • ½ red capsicum chopped
  • 1 bottle of passata
  • three handfuls of spinach or other greens (eg. kale, dandelion)
  • 1 large tin of tuna in olive oil (Sirena brand)

Instructions:

  • fry the over a medium heat chopped onion, garlic, capsicum and carrot until they are tender
  • add the bottle of passata and allow bring to a slow boil
  • take off the heat and add tuna and chopped greens. Cover and leave aside.
  • Cook the pulse pasta according to the instructions on the packet
  • Strain the pasta and return to the pot. Add the tuna sauce. Stir through and serve.
