Ingredients
- one onion (chopped)
- 2 tins of lentils (drained)
- three handfuls of baby spinach (or other greens: dandelion, kale)
- 1 pinch of salt
- 1 tablespoon of olive oil
- 2 tablespoons of plain yogurt
- juice of half a lemon
Directions
- Heat a frying pan on medium heat
- Fry the chopped onion in a little oil for 2 minutes
- add the drained lentils and fry for 1 minute
- add the baby spinach (or other greens) and allow to heat through until the spinach is wilted
- remove from the heat and add the lemon juice and olive oil: stir it in
- finally add the yogurt and stir through
- serve on its own or with brown rice, quinoa or millett
