Quick lentils and spinach

Ingredients

  • one onion (chopped)
  • 2 tins of lentils (drained)
  • three handfuls of baby spinach (or other greens: dandelion, kale)
  • 1 pinch of salt
  • 1 tablespoon of olive oil
  • 2 tablespoons of plain yogurt
  • juice of half a lemon

Directions

  • Heat a frying pan on medium heat
  • Fry the chopped onion in a little oil for 2 minutes
  • add the drained lentils and fry for 1 minute
  • add the baby spinach (or other greens) and allow to heat through until the spinach is wilted
  • remove from the heat and add the lemon juice and olive oil: stir it in
  • finally add the yogurt and stir through
  • serve on its own or with brown rice, quinoa or millett
